Ingredients
- 1kg Vegan Cake Mix
- 240ml Vegetable Oil
- 475ml Water (Variable)
- 500g Mixed Fruit
- 2 Tspn Melange (Mixed Spice)
Method
- Blend on low speed for 1 min. Scrape down.
- Blend on medium speed for 6 mins
- Add rest of ingredients and blend on low speed for 1 min
- Place in 10 inch round lined cake tin
- Bake at 180 degrees approx 1hr
TIPS: Pre-soak your fruit in Brandy or Rum or drizzle over warm cake before removing from the tin! To prevent your cake from drying out cover with foil half way through baking
