Vegan Christmas Fruit Cake

Ingredients

  • Vegan Cake Mix 1kg
  • Vegetable Oil 240ml
  • Water (Variable) 475ml
  • Mixed Fruit 500g
  • Melange (Mixed Spice) 2 Tsp

Method

  1. Blend on low speed for 1 min. Scrape down.
  2. Blend on medium speed for 6 mins
  3. Add rest of ingredients and blend on low speed for 1 min
  4. Place in 10 inch round lined cake tin
  5. Bake at 180 degrees approx 1hr

TIPS: Pre-soak your fruit in Brandy or Rum or drizzle over warm cake before removing from the tin! To prevent your cake from drying out cover with foil half way through baking
